The beans sit in the hopper, ground on demand. This is the faster way when the same variety is always running.
The diameter of the grinding burrs determines how many revolutions are needed for the same amount of coffee.
Flat burrs grind with two parallel rings and deliver a tight particle size distribution.
Stepless means you can adjust continuously, even between two clicks.
The grinder weighs itself and grinds until the set amount is in the portafilter.
A large hopper means less frequent refilling.
The beans sit in the hopper and are ground on demand.
The grinder output indicates how much ground coffee comes out per second.
The numbers from the data sheet, in the order that matters. A faster grinder does not grind better, it only grinds more.
The larger the burrs, the fewer revolutions are needed for the same amount of coffee. The grounds heat up less, and heat in the ground coffee costs aroma. Installed are cast steel.
Manufacturer specification for when the burrs should be replaced. Dull burrs are not noticeable by the grind appearance, but only by taste.
For 18 g of coffee, calculated from 11,5 g per second. For a single drink you hardly notice it: brewing and milk foam take longer than grinding. For 50 drinks during peak time that is about 5 minutes less grinding time than the mid-range of our assortment.
These are 858 square centimeters of counter that are permanently occupied. At 67 cm height you need space above it for refilling.
That would be about 7000 espressos per day at 18 g per shot. The maximum performance quoted by the manufacturer, not a recommendation for everyday use. If you regularly operate in this range, schedule maintenance more frequently.
All values come from the data sheet of this device. If a specification is missing, it is not listed here.

User manual (PDF) opens the page of MahlkönigThe beans sit in the hopper and are ground on demand. This is the faster way in everyday life, especially if the same coffee is used all the time. A full hopper, however, means that the beans at the bottom are exposed to the air for longer.
The diameter of the grinding burrs determines how many revolutions are needed for the same amount of coffee. Larger burrs need fewer revolutions, the grind warms up less, and heat in the grind reduces aroma.
Flat burrs grind with two parallel rings and deliver a tight particle size distribution. You do not recognize dull burrs by appearance but by the fact that the shot runs faster than usual.
Stepless means you can adjust continuously, even between two clicks. That is useful when a bean falls exactly between two settings, but it requires that you remember your setting.
The grinder weighs itself and grinds until the set amount is in the portafilter. That stays the same even when the bean changes or the bag gets emptier, where a time-based control would need readjusting.
The grinder output indicates how much ground coffee comes out per second. For a single drink you hardly notice it, as extraction and milk determine the time. You only feel it when many drinks are made back to back.
A large hopper means less frequent refilling. Bear in mind that beans age in it: anything that stays in the hopper for longer than a few days loses aroma, no matter how good the grinder is.

The Mahlkönig EK Omnia is well suited to coffee grinding for various applications, including filter coffee, due to its design and technology. It offers high precision, speed and reproducibility, which are important for achieving consistent results. Furthermore, the EK series, including the EK43, has established its place in the specialty coffee sector and is valued for its homogeneous particle distribution, making it advantageous for filter coffee applications as well.
Mahlkönig reports optimized retention for the Omnia thanks to the new grinding-chamber design; concrete values typically lie below 0.3 g (vs. 0.5–1 g in older EK43 generations). The practical impact: when switching from a light third-wave roast to darker blends you carry less retained grounds into the next dose. The combination of 98 mm flat burrs and app control lets you create separate profiles per coffee, including a grind-size offset. This means you can switch between two single origins without losing flavor clarity to cross-contamination, which with the classic EK43 often required 2–3 purges.
The EK Omnia is designed for commercial use in high-frequency cafés. Its grinding mechanism delivers consistently high performance, even with many consecutive orders. The Grind-by-Weight technology ensures uniform portions, even during intense morning operations. The robust construction allows for continuous operation during peak times.
Many professionals appreciate Mahlkönig grinders for their robustness and durability. With regular maintenance, they are designed for continuous use. Wear parts such as grinding discs, motor, and dosing unit are easily replaceable, and spare parts remain available. The EK Omnia is designed for high throughput and optimized for consistent grinding results. Users report years of reliable quality, minimal downtime, and stable beverage quality, making it a worthwhile long-term investment.
The E65W GbS is designed for classic espresso applications. It features 65 mm grinding discs and the Grind-by-Sync system for a consistent workflow. The EK Omnia is based on the EK43 and is versatile, suitable for espresso, filter coffee, and brewing methods. It has 98 mm grinding discs, a narrow particle distribution, and digital features such as a touch display and app control. If you want to offer multiple coffee varieties or need advanced functions, the EK Omnia provides versatile options.
The app control of the EK Omnia is not a gimmick but process optimization. You can centrally manage grind sizes, recipes and dosages, quickly recall reproducible profiles when staff change or with new beans, and track throughput statistics. During peak times operation via the touch display remains intuitive while you can test recipes calmly in advance. This ensures consistency especially with multiple staff; a common gastro challenge in practice is fluctuating grind-size consistency due to manual adjustment. The Disc Distance Detection (typical of Mahlkönig premium models) also warns of wear. In short, digital features increase reproducibility, reduce training time and minimize waste.
For espresso, models with 64 mm or 65 mm grinding discs are ideal. The E65W GbS is currently Mahlkönig's most important café grinder and handles 80 to 120 shots per day with consistent quality. For home use the X64 SD is perfect: it grinds single portions fresh, has a 64 mm hardened steel disc burr set and you can adjust the grind size steplessly from 120 to 1,500 µm. The ground coffee has a very even particle distribution, which makes the espresso cleaner and less bitter.
The X64 SD is specifically built for Single Dose. You only put in the beans you need, it grinds them all the way through and almost nothing remains in the grinder. That is perfect if you want to try different coffees without residues mixing. The E64 WS can also weigh single portions with Grind-by-Weight. Classic café grinders like the E65W have a bean hopper and are intended for continuous operation.
The X64 SD is ideal for home. It is compact, grinds fresh per cup and runs quietly under 65 dB. The E64 WS is the bridge between home use and a small café: more precise with Grind-by-Weight but more expensive. Both have 64 mm grinding discs which are more than sufficient for espresso. Important: Mahlkönig grinders are an investment. If you previously had an inexpensive entry-level grinder you will notice the difference in taste immediately.
The EK43 is legendary for both preparation methods. It has 98 mm grinding discs and delivers a very even grind from espresso to filter coffee. That is why it was used for years at barista competitions. For pure espresso in a café there are now faster alternatives like the E65. The X64 SD at home also covers both areas with its stepless adjustment from 120 to 1,500 µm. For filter coffee you simply set it coarser.
