Guide · As of October 2026
For milk foam you need a barista edition; normal oat drinks hardly foam. In terms of taste, Oatly Barista has been considered the benchmark by testers and home baristas for years. In the biggest comparison test, however, several organic store brands were ahead on the foam. And: organic oat drinks do without phosphates and usually stabilize the foam with a small amount of soy.
We have not tested these drinks ourselves. This article summarizes what published tests and experience reports say and cites the source for each.
What a barista edition does differently
Three things distinguish it from a regular oat drink:
- More fat. Conventional barista drinks contain around 3.0 g per 100 ml, usually from rapeseed or sunflower oil. Fat makes the foam creamy.
- An acidity regulator. Coffee is acidic. Conventional manufacturers therefore add phosphates that keep the drink stable in coffee. Oatly itself writes that dipotassium phosphate evens out the coffee's pH and prevents curdling.
- Or additional protein. Many organic drinks contain about 2% soy or pea protein. The protein holds the air bubbles.
Why organic oat drinks are made differently
Only additives that are on an EU positive list are allowed in organic foods (Implementing Regulation 2021/1165, Annex V). The potassium phosphates common in conventional barista drinks are not on that list. Fortification with calcium and vitamins is also not allowed in organic products.
Organic manufacturers solve this differently: with some soy or pea protein, with oil, and through the way the oats are broken down. Individual organic drinks use potassium carbonate as an acidity regulator.
What this means for you: if you don't want phosphates in your coffee, organic is the right choice. If you are intolerant to soy, you must check the ingredients list carefully for organic barista drinks.
The drinks at a glance

| Oatly Barista Edition | no | 3.0 g | Dipotassium phosphate |
| Oatly Bio Barista | yes | 3.2 g | Potassium carbonate |
| Alpro Barista Oat | no | 3.1 g | Potassium phosphates, pea protein |
| Kölln Oat Drink Barista | no | 3.1 g | none declared |
| Lidl Vemondo Barista | no | 3.2 g | Calcium phosphates |
| Voelkel Oat Barista (glass, reusable) | yes | 3.3 g | none declared |
| Minor Figures Barista Organic | yes | 2.1 g | Potassium carbonate |

What the tests say
Kaffeemacher, June 2024. The largest comparison specifically for baristas: 20 barista oat drinks, blind tasted by six experts, frothed by a Swiss latte art champion, each with a chocolatey and a fruity espresso.
- Overall winner: dm oat drink Barista with soy, also top for price.
- Best taste in the cappuccino: Mølk.
- Full score for foam: among others REWE Bio, Alnatura and Provamel Bio Barista.
- Oatly, Alpro and Voelkel were midfield on the foam, Allos behind them.
At least five of the six drinks with a full foam rating were organic. Phosphate is therefore not necessary for good foam.
Stiftung Warentest, 2020. Not a pure barista test and now dated. Oatly Barista Edition scored very well in the sensory evaluation and produced plenty of creamy, stable foam.
Öko-Test, 2023. Ingredients and contaminants were examined, not the foam. 30 of 31 organic oat drinks received a “very good.” Added phosphates, flavorings and vitamins led to downgrades; Oatly Barista Edition therefore received only “satisfactory.”
There is no current German test that examines the foam. Öko-Test has announced a test of barista oat drinks.
What home baristas report
Experiences from the kaffee-netz forum, 2023 and 2024. These are individual opinions, not a test.
- Oatly Barista is most often mentioned as the reference, for taste and for latte art.
- Lidl Vemondo Barista and Aldi Organic Barista are considered by many to be inexpensive alternatives that come close.
- Berief oat-soy Barista is praised for the foam; some find it too oat-forward in taste.
- Minor Figures and Provamel are mentioned for taste in the flat white.
- Opinions on dm Barista vary. Some find it watery, others think the newer recipe is significantly better.
Notably, this contradicts the test: the Kaffeemacher winner has mixed reviews in the forum, and Oatly was only mid-table for foam in the test. Recipes were changed in the meantime, and taste is subjective. It's worth trying two or three drinks yourself.
Where tests and users agree
- Barista editions foam significantly better than regular oat drinks.
- Oatly Barista is the taste benchmark.
- Inexpensive store brands keep up on the foam.
- Organic drinks foam well even without phosphates.
How to froth oat drink
- Keep it well chilled and shake vigorously. The components settle.
- Introduce less air than with cow's milk. Oat drink gains volume quickly.
- Stop at about 60 °C. Manufacturers name 60 °C as the upper limit. Oat drink heats faster than cow's milk, and foam heated too much collapses quickly.
- Do not heat twice. Do not re-froth leftovers.
- Pour immediately. Oat foam separates faster than milk foam.
Why oat drink curdles in coffee
Manufacturers and guides name two triggers: the acidity of the coffee and the temperature shock when a cold drink meets hot coffee. The protein coagulates, and the drink curdles.
What helps:
- use a barista edition
- warm the drink instead of pouring it cold
- let the coffee cool for a moment
- pour slowly and stir while pouring
- choose a low-acidity coffee
Which espresso suits oat drink?
Oat drink brings its own sweetness and a grain note. Two directions work, and opinions differ.
The safe choice: dark and low-acid. Low acidity means less risk of curdling, and chocolate notes combine with the oat sweetness into something that resembles muesli with cocoa. For us this is Ätna Bio Espresso: dark chocolate, nougat, roasted hazelnut, very low in acidity. Or Vesuv if you prefer it stronger.
The middle way: Houseblend N°1 with chocolate, nougat and just a hint of citrus.
For the adventurous: fruity. Some home baristas find that fruity, floral espressos go better with oat drink than dark ones, because the oat sweetness carries the fruit. Hochlandjuwel with blueberry and cherry would be the candidate. Use a barista edition here and pour the drink warm, because the higher acidity makes curdling more likely.
Our recipes for cappuccino and flat white also apply with oat drink: Cappuccino and Flat White.
Frequently asked questions
Which oat drink foams best?
In the Kaffeemacher comparison from 2024, among others REWE Bio, Alnatura and Provamel Bio Barista achieved the full score for foam. The decisive factor is that it is a barista edition.
Which oat drink tastes best in coffee?
Oatly Barista is most often named as the benchmark by testers and home baristas. In the Kaffeemacher test Mølk was top for taste in the cappuccino.
Are there organic barista oat drinks?
Yes, many. Among them from Oatly, Voelkel, Natumi, Berief, Allos, Alnatura, dennree, dmBio and REWE Bio. Most contain about 2% soy as a foam aid.
Why do organic oat drinks not contain phosphate?
Because potassium phosphates are not on the list of additives permitted in organic foods.
Why does oat drink curdle in coffee?
Because of the coffee's acidity and the temperature difference. Barista editions, warmed drink and low-acidity coffee usually prevent it.
How hot may oat drink get when frothing?
About 60 °C. Above that the foam collapses more quickly.
Is oat milk the same as oat drink?
Yes. In the EU the word milk may only be used for animal milk, which is why the package says oat drink.
